Microwave Chinese Takeaway Style Turkey Curry
AD / Nothing says Boxing Day like a Turkey Curry! Without question, my favourite takeaway is Chinese Chicken Curry. As it's Christmas, I thought I'd do a homemade turkey version that uses one dish - and a microwave!!
I'm working with Smart meters to show you ways that you can use less energy and save money this Christmas...Microwaves are a really quick, really efficient way to cook, so it's the perfect way to make a cheap 20 minute curry, using some of that lovely leftover turkey!

Feeds 4
2 tbsp oil
1 onion cut into medium pieces
1 green pepper cut into medium pieces
30g plain flour
1.5 tbsp medium curry powder
1/2 tsp turmeric
300ml chicken stock
250ml milk
300g leftover roast turkey slices, turn into equal sized pieces
80g frozen peas.
Drizzle the oil into a large microwave proof dish. Place the dish in the microwave and cook on high for 3 minutes.
Add the onion and peppers to the dish, give it a good stir and return to the microwave for 5 minutes.
Stir in the flour, curry powder and turmeric. Microwave for 1 minute. Pour the stock and the milk into the dish and give it a good stir, making sure you pull in all the flour mixture from the edges.
Stir in the turkey and the frozen peas. Season with salt and pepper
Microwave for 5 -7 minutes on high, stirring once or twice halfway through until the sauce is thick and the turkey and peas are heated through.
Serve with rice - and maybe some Chinese side dishes!
