My Provence Kitchen
A small change, but one that holds great significance ❤️
I’ve decided to rename the channel from My Vegan Provence to My Provence Kitchen.
While the essence of the food will remain exactly what you’ve come to love—plant-based, inspired by Provence, Southern France, and the Mediterranean—this new name reflects a broader and more inclusive vision. I want this space to feel open and welcoming to everyone who loves good food, regardless of their dietary choices.
I understand that some people may be hesitant about the word "vegan," fearing that it might impose certain values or restrictions. My goal is to offer everyone delicious food alternatives that are just as satisfying as traditional dishes made with animal products. It’s about providing compassionate options that allow each person to make mindful, kind choices when it comes to their food.
Rest assured, animal-based products will never feature on my channel. My commitment remains to reinvent and celebrate Southern French cuisine in a way that is innovative, flavorful, and aligned with my values. I am passionate about promoting plant-based alternatives that honor our love for animals, protect the environment, and support our health.
By broadening the scope of this channel, I hope to reach a larger audience because food is a universal language that unites us. It’s about sharing traditions, flavors, and the joy of cooking with as many people as possible. I believe that good food can connect us beyond labels, borders, and dietary preferences, creating a space where everyone feels invited to celebrate these beautiful, flavorful dishes.
This expansion aims to inspire more people to explore the rich culinary heritage of Provence and the Mediterranean—made entirely from plants. I want to introduce new ingredients, techniques, and ideas that can enhance your own cooking, fostering a community where everyone feels comfortable sharing their love of food, learning, and enjoying the pleasures of the table together.
Ultimately, it’s not just about labels—it’s about nurturing a shared love for delicious, beautiful food and the warmth of gathering around a table.
Let me know if you support this change and what you think of the new name. I’ll be back soon with a new Provençal recipe, made entirely with plants!
Welcome to My Provence Kitchen! 🇫🇷🌿❤️

☀️ PROVENÇAL SUMMER APÉRITIF: DIP, SPREAD & ENJOY! 🍅🫒🌿
Summer in Provence is made for long apéritifs, a glass of something cold, good bread… and a table covered with irresistible things to spread, dip and share. 🇫🇷☀️
I have a whole collection of Provençal dips and spreads that are perfect for exactly that. Most require little or no cooking, but what they deliver in flavor, freshness and pleasure is anything but simple.
All you need is some really good bread — toasted until crisp and golden — and you’re ready for an apéritif that tastes like summer in the South of France. 🌿🍷
🥖 Start with the bread: Make my homemade FOCACCIA (skip the Sichuan pepper topping) https://youtu.be/uQdIEEPcVa0 or a traditional FOUGASSE HTTPS://youtu.be/1my2Z1Qhv4E , the spectacular Provençal Bread that is surprisingly easy to make. Or try my OLIVE OIL ARTISAN BREAD https://youtu.be/-P4tLn7suBg — beautifully moist, fragrant and perfect for tearing apart and dipping. Or simply go to your favorite Baker shop.
🫒 BLACK PESTO HTTPS://youtu.be/rBu6Y0gh8b8 Yes… pesto made with black ingredients, hence its name, a rare recipe, almost forgotten, and yes, it is absolutely incredible on bread. The flavor is deep, intense and wonderfully Mediterranean. One of those recipes you have to taste to understand just how much flavor can come from such simple ingredients.
🌿 PISTOU — Provençal GREEN PESTO https://youtu.be/iY-WWwhAOOY Fresh basil, garlic and olive oil — a true flavor bomb. Traditionally made with a mortar and pestle, which helps preserve that beautiful green color and gives it an incredible texture. Spread it generously on warm toast and let the summer begin!
🌿 ANCHOÏADE PROVENÇALE — Vegan https://youtu.be/IlJKSCMS2ik One of the great flavors of Provence. Traditionally made with anchovies, I recreated it with my homemade vegan anchovy paste. And with figs coming into season, this is a particularly wonderful combination: salty, savory, rich and beautifully balanced by the sweetness of fresh figs.
🫒 BLACK TAPENADE https://youtu.be/6EtnCOL5HD0 A Provençal classic among classics. Intense, salty, rich and unmistakably olive-forward. And here, the quality of the olives makes a huge difference — use genuinely ripe, naturally black olives rather than the artificially blackened olives often sold in supermarkets.
And did you know that green tapenade exists too? 💚If you’d like me to film that recipe, let me know in the comments!
🥕 Two PROVENÇAL MAYONNAISES https://youtu.be/hGMAME8L2AU In my homemade mayonnaise video, I also show two incredibly flavorful versions that are fantastic on toast: Mayonnaise au Pistou and Mayonnaise Rémoulade Provençale.
And don’t stop at bread — they are also wonderful for dipping crunchy raw vegetables like carrots and celery.
🌶️ ROASTED BELL PEPPERS À LA PROVENÇALE https://youtu.be/iws-UiR9NogNot technically a dip, but absolutely made for spreading on bread. The peppers become incredibly soft, naturally sweet and almost melt on the tongue, with that unmistakable combination of sun-ripened sweetness and garlic. ☀️🧄
🍹And if you don’t drink alcohol, try my LAVENDER LEMONADE https://youtu.be/3_47632WUWQ . Ultra refreshing with that incredible color and flavor form Provence. 🍸You could also add, a measure of vodka, in each glass and you will see life in purple! 💜💜💜
So if you're planning a summer apéritif, forget complicated cooking.
Get some beautiful bread, open a bottle of rosé, put these on the table and let everyone dig in. 🍷🥖🌿

🌱 Did you know you can make vegan mozzarella from watermelon seeds? 🍉🧀
Most vegan mozzarella recipes rely on cashews, but cashew farming often comes with serious environmental and social concerns. Watermelon seeds, on the other hand, are an abundant agricultural byproduct that are too often discarded despite being packed with nutrients.
The result? A mozzarella that's creamy, delicious, affordable, and made from an ingredient that deserves a second life. ♻️✨
If you're looking for a more sustainable alternative to cashew-based cheese, this recipe is for you!

Headline: ☀️ Stay Cool with a Provençal Sandwich Tour! 🥪✨
Hi guys!
When the Mediterranean sun is at its peak (30°C and climbing!), the last thing you want is a hot oven heating up your kitchen. The answer to a refreshing, nutrient-dense summer lunch? The Art of the Sandwich. 🥖
I’ve gathered my favorite "no-cook" recipes to help you build a masterpiece that tastes like pure bliss on a plate:
THE "ELITE" TUNA MAYO: A refined take on the classic using tender chickpeas and seaweed. This was a star at my Donna Bella High Tea for its sophisticated, briny depth. Slater the vegan tuna mayo between 2 sandwich bread slices (check there is no milk) and a slice of lettuce and maybe few tomato slices

4 Mayo recipes [https://youtu.be/hGMAME8L2AU]
THE PESTO & CHEESE "PATCH": Slather my Basil Pesto on crusty bread and top it with my creamy Ricotta[https://youtu.be/JbMUT6yA2KU] or my signature Tangy Brousse. Whether you choose almond (delicious!), cashew (ultra-creamy), or soy (easy & satisfying), it’s the perfect fix for bland vegan alternatives.
👉 Pesto: [https://youtu.be/iY-WWwhAOOY]
Brousse: [https://youtu.be/JND8ip2gpgk]
Ricotta: [https://youtu.be/JbMUT6yA2KU]
THE BOLD TAPENADE & ROASTED PEPPER: For those who love savory, briny notes, try my Provençal Tapenade on focaccia rolls with Roasted Red Peppers. Layer it with arugula and a dollop of Brousse for a sandwich that rivals any Parisian café.
👉 Tapenade: [https://youtu.be/6EtnCOL5HD0]
Peppers: [https://youtu.be/iws-UiR9Nog] (Make them or buy them)
THE BLACK PESTO DREAM: USE my incredibly flavorful Black Pesto paired with avocado and tomato slices for a simple yet bold creation.

Headline: ☀ The Most Elegant Way to Beat the Heat! 🍦✨
Hi guys!
Summer is officially here, and I’ve created a recipe to "patch" the biggest problem with homemade summer treats: that brittle, icy texture. 🧊❌
In my latest video, I’m sharing how I buffed the mouthfeel of the classic summer popsicle. By using the whole fruit, we achieve an incredible, satisfying flavor and a smooth texture that finally eliminates those annoying ice crystals.
Why this is the "S-Tier" flavor of the summer:
* The Marriage: Apricot and Lavender—an elegant pairing where one perfectly enhances the other. 🌿🍑
* The Balance: Perfectly sweet, but never overly so.
* The Nutrition: High-value fruit nutrition that's perfect for adults and great for children!
Where tradition rhymes with innovation, this is how we cool down in Provence.
