I remember a specific day back in 2012 when I first went vegan.

It had been a long day of work at my office job, and a bunch of traffic on the way home to top it off. I was tired, I was hungry, I was hangry you could say...

It was now about 7pm, and I opened the fridge to see that I had nothing. No prepared food. Just a random assortment of veggies and a block of cold tofu.

As I was new to cooking vegan I had no idea what to make. And honestly, I was way too tired to try to figure it out.
Back then take-out wasn't even an option for me as I didn't know a single place that delivered plant-based meals.

So I just tossed together a salad, which honestly, wasn't very good. So I caved and ate an entire bag of potato chips (and it wasn't one of those small bags either). I knew this wasn't sustainable.

While I still love potato chips once in a while, I wanted to eat healthier... but not the boring kind of healthy. I wanted scrumptious food that was satisfying and full of flavor.

But I just didn't have time to cook every night.
I was too busy at work. I wanted to meet up with friends. And sometimes I just wanted to curl up on the couch and just relax.

So it turns out that about 80% of my footage for my next video was completely out of focus. 😥 I could've rushed like a mad woman to film and edit a new video, but I decided it would be better to skip the stress.
