🌽 CORN CAKES WITH GUACAMOLE

Since so many of you love having a text version to save, here is the full breakdown for this air fryer corn cakes and guacamole combo. It’s the ultimate foolproof recipe for a delicious, healthy snack or breakfast.

INGREDIENTS
🌽 For the corn cakes
Canned corn - 1 cup (250 g)
Eggs - 3 large (or a mixture of flaxseed and water as a substitute)
All-purpose flour - 2 tablespoons
Heavy cream - 1/2 cup (120 ml)
Grated cheese - 1 cup (100 g)
Green onion - 2 tablespoons (10 g)
Vegetable oil - for greasing
Ground black pepper - to taste
Garlic powder - 1/4 teaspoon (1 g)
Italian seasoning - 1/4 teaspoon (1 g)
Salt - to taste

🥑 For the guacamole
Avocado - 1 large (250 g)
Tomato - 1 large (200 g)
Shallot - 1 medium (100 g)
Lime juice - 2 tablespoons
Olive oil - 1-2 tablespoons
Ground black pepper - to taste
Salt - to taste

INSTRUCTIONS

1. Prep the Batter 🥣
In a bowl, mix corn, eggs (or flaxseed alternative), and flour. Pour in slightly warmed heavy cream, then stir in grated cheese, green onions (or spinach/herbs), salt, pepper, garlic powder, and Italian seasoning.

2. Airfrying 🔥
Lightly grease the air fryer with vegetable oil - just a thin layer. Pour in half the batter and bake at 350°F (180°C) for 15 minutes until perfectly golden. Repeat for the next batch.

3. Make the Guacamole 🥑
While baking, mash a ripe avocado with a fork. Mix in a diced tomato, finely chopped shallot (for a sweet, mild flavor), fresh lime juice, salt, pepper, and a drizzle of olive oil.

4. Serve 🍽
Cut the warm corn cake into 4 pieces. Add fresh guacamole and enjoy an explosion of bright flavors!

🥒 CRISPY ZUCCHINI RINGS

After last week's zucchini ring video, my inbox went a bit wild. So many of you asked for the recipe in writing - to save, to print, to text to your sister. So here it is, all in one place.

INGREDIENTS
🧂 Base
Zucchini - 2 medium (600 g)
Salt - to taste

🌿 For the seasoned centers
Olive oil - 1-2 tablespoons
Black pepper - to taste
Ground nutmeg - 1/4 teaspoon (1 g)
Oregano - 1/2 teaspoon (1 g)
Salt - to taste

🥣 For the batter
Flour - 3/4 cup (100 g)
Salt - to taste
Water - 3/4 cup (200 ml)

🧀 For the Parmesan breading
Breadcrumbs - 1 1/2 cups (150 g)
Parmesan - 1 cup grated (100 g)
Smoked paprika - 1/2 teaspoon (1 g)
Granulated garlic - 1/4 teaspoon (1 g)

🍋 For the lime yogurt sauce
Greek yogurt - 2/3 cup (150 g)
Garlic - 2 cloves (8 g)
Lime juice - 2 tablespoons
Dill - 1/4 cup (10 g)
Salt - to taste

INSTRUCTIONS

1. Prep the Rings
Slice zucchini into thick rounds. Now this part is fun - pop the centers out with a spoon. Don't toss them. We're doing something special with them later. Salt the rings, give them 15 minutes to weep, then pat them bone-dry. This is what makes them crisp.

2. Roast the Centers
Toss those centers with olive oil, nutmeg, and oregano. Air fry at 350°F for 15 minutes. Set aside.

3. Batter & Crunch
Whisk flour, salt, and water into a smooth batter. In another bowl, mix breadcrumbs, Parmesan, paprika, and garlic.

4. Coat
Dip each ring into the batter, then dredge in the breadcrumb mix until fully coated. Press the breading on gently - that's where the crunch lives.

5. 🔥 Air Fry
Arrange in the basket, no overlapping. Cook at 350°F for 15 minutes. Want them extra crisp? Give them 8 more minutes.

6. 💡 The Secret Sauce - my favorite part
This is where the centers come back. Blend them with yogurt, garlic, lime juice, and dill until creamy.

7. 🥄 Serve
Plate them up, give everyone their own little bowl of sauce, and watch them disappear in five minutes flat.
