🌽 AIR FRYER CORN RIBS
The juicy corn ribs video dropped last week, and so many of you asked for the written version. So here it is - exact measurements, step-by-step instructions, and photos of the process, all for your convenience!

INGREDIENTS
🌽 For the corn ribs
Fresh corn - 4 ears
Garlic powder - 1/4 teaspoon (1 g)
Lime juice - 2 tablespoons
Olive oil - 2 tablespoons
Smoked paprika - 1/4 teaspoon (1 g)
Salt - to taste
🥣 For the dill sauce
Plain Greek yogurt (regular or plant-based) - 2/3 cup (150 g)
Fresh dill - 1/3 cup (10 g)
Garlic - 1-2 cloves
Whole grain mustard - 1 teaspoon
Ground black pepper - to taste
Salt - to taste
🧈 To finish
Butter - 3 1/2 tablespoons (50 g)
Grated Parmesan (regular or vegan) - 1/4 cup (20 g)
INSTRUCTIONS
1. Prep the Ribs 🌽
Carefully slice corn ears into quarters lengthwise for small, curved pieces that cook evenly.
2. Season & Coat 🥣
Toss corn with salt, smoked paprika, garlic powder, lime juice, and olive oil. Coat every piece thoroughly.
3. Air Fry 🔥
Arrange ribs in the basket kernels-down in a single layer. Air fry at 350°F (180°C) for 15 minutes.
4. Flip & Crispen 💡
Flip the ribs and air fry for 5 more minutes until golden and crispy at the edges.
5. Whisk the Sauce ⏱️
Mix Greek yogurt, dill, garlic, mustard, salt, and pepper until smooth.
6. The Golden Finish 🧀
Brush hot ribs with butter and sprinkle with grated Parmesan.
7. Serve 🥄
Plate up with the garlic-dill sauce and enjoy warm!

🌽 CORN CAKES WITH GUACAMOLE
Since so many of you love having a text version to save, here is the full breakdown for this air fryer corn cakes and guacamole combo. It’s the ultimate foolproof recipe for a delicious, healthy snack or breakfast.

INGREDIENTS
🌽 For the corn cakes
Canned corn - 1 cup (250 g)
Eggs - 3 large (or a mixture of flaxseed and water as a substitute)
All-purpose flour - 2 tablespoons
Heavy cream - 1/2 cup (120 ml)
Grated cheese - 1 cup (100 g)
Green onion - 2 tablespoons (10 g)
Vegetable oil - for greasing
Ground black pepper - to taste
Garlic powder - 1/4 teaspoon (1 g)
Italian seasoning - 1/4 teaspoon (1 g)
Salt - to taste
🥑 For the guacamole
Avocado - 1 large (250 g)
Tomato - 1 large (200 g)
Shallot - 1 medium (100 g)
Lime juice - 2 tablespoons
Olive oil - 1-2 tablespoons
Ground black pepper - to taste
Salt - to taste
INSTRUCTIONS
1. Prep the Batter 🥣
In a bowl, mix corn, eggs (or flaxseed alternative), and flour. Pour in slightly warmed heavy cream, then stir in grated cheese, green onions (or spinach/herbs), salt, pepper, garlic powder, and Italian seasoning.
2. Airfrying 🔥
Lightly grease the air fryer with vegetable oil - just a thin layer. Pour in half the batter and bake at 350°F (180°C) for 15 minutes until perfectly golden. Repeat for the next batch.
3. Make the Guacamole 🥑
While baking, mash a ripe avocado with a fork. Mix in a diced tomato, finely chopped shallot (for a sweet, mild flavor), fresh lime juice, salt, pepper, and a drizzle of olive oil.
4. Serve 🍽
Cut the warm corn cake into 4 pieces. Add fresh guacamole and enjoy an explosion of bright flavors!
