Cheesecake Stuffed Chocolate Chip Cookies
Ingredients
For the Cheesecake Filling
• 100g (½ cup) cream cheese, softened
• 2 tbsp sugar
• ½ tsp vanilla extract
For the Cookie Dough
• 1¾ cups (220g) all-purpose flour
• ½ tsp baking soda
• ¼ tsp salt
• ½ cup (115g) unsalted butter, softened
• ½ cup (100g) brown sugar
• ¼ cup (50g) white sugar
• 1 large egg
• 1 tsp vanilla extract
• 1 cup (170g) chocolate chips
Instructions
In a small bowl, mix the cream cheese, sugar, and vanilla until smooth and creamy.
Scoop out small teaspoons of the filling onto a lined tray and freeze for 30 minutes.
In another bowl, whisk together flour, baking soda, and salt.
In a separate large bowl, cream the butter and both sugars until light and fluffy.
Beat in the egg and vanilla. Gradually mix in the dry ingredients until combined, then fold in the chocolate chips.
Scoop a tablespoon of cookie dough and flatten it slightly in your palm. Place one frozen cheesecake ball in the centre, then cover with another small piece of dough and seal the edges to form a smooth ball.
Arrange on a parchment-lined baking sheet, leaving space between cookies.
Chill for 10–15 minutes before baking (this keeps them thick and chewy).
Bake in a preheated oven at 175°C (350°F) for 11–13 minutes, or until the edges are golden and the centres look slightly soft.
Let cool on the tray for 5 minutes before transferring to a rack.

Super Moist Chocolate Cake (🧾 Ingredients)
Dry ingredients
3 cups all-purpose flour
3 cups granulated sugar
1½ cups cocoa powder (use dark/alkalized if you can)
3 tsp baking soda
1½ tsp baking powder
1½ tsp salt
Wet ingredients
1½ cups vegetable oil
3 large eggs (room temperature)
1½ cups buttermilk (or milk + 1½ tbsp vinegar)
1½ cups hot coffee or hot water
3 tsp vanilla extract
👩🏽🍳 Method
Preheat oven to 170°C / 340°F
Grease and line three 8-inch pans.
In a large bowl, whisk all dry ingredients together.
Add oil, eggs, buttermilk, and vanilla.
Mix until smooth (don’t overmix).
Slowly pour in the hot coffee/water.
Batter will be thin – that’s the secret to moisture 😉
Divide batter evenly into the 3 pans.
Bake 30–35 minutes or until a toothpick comes out with moist crumbs.
Cool in pans for 10 minutes, then turn out and cool completely.

Orange Cake
Ingredients
2½ cups all-purpose flour
1 cup sugar
½ cup vegetable oil
1 cup fresh orange juice
2 eggs
1 tablespoon orange zest
2 teaspoons baking powder
¼ teaspoon salt
1 teaspoon vanilla essence
Instructions
1. Preheat oven to 170°C. Grease and flour a cake pan.
2. In a bowl, whisk eggs and sugar until well combined.
3. Add oil, orange juice, orange zest, and vanilla. Mix well.
4. Sift in flour, baking powder, and salt. Mix until smooth.
5. Pour batter into the prepared pan.
6. Bake for 35–45 minutes or until a toothpick inserted comes out clean.
7. Cool before removing from pan.

• 2 tsp baking powder
• ½ tsp baking soda
• ¼ tsp salt
• 2 tsp vanilla extract
Instructions
Preheat oven to 175°C (350°F). Grease and line two 8-inch round cake pans. In a mixing bowl, cream butter and sugar until light and fluffy. Add eggs one at a time, beating well after each. Mix in vanilla extract. In another bowl, whisk flour, baking powder, baking soda, and salt. Gradually add the dry ingredients to the butter mixture, alternating with milk, until you get a smooth batter. Divide evenly into the prepared pans. Bake for 25–30 minutes, or until a toothpick inserted in the center comes out clean. Let cakes cool completely before removing from pans.

For Vanilla Cake

• 2 tsp baking powder
• 1 tsp vanilla extract
• Pinch of salt
For Chocolate Cake
• 2 cups (250g) all-purpose flour
• 1 cup (200g) sugar
• ½ cup (50g) cocoa powder
• 1 cup (240ml) milk
• ½ cup (115g) butter (softened)
• 2 large eggs
• 2 tsp baking powder
• 1 tsp vanilla extract
• Pinch of salt
For Red Velvet Cake
• 2 ½ cups (310g) all-purpose flour
• 1 ½ cups (300g) sugar
• 1 cup (240ml) vegetable oil
• 1 cup (240ml) buttermilk
• 2 large eggs
• 2 tbsp cocoa powder
• 1 tsp baking soda
• 1 tsp vinegar
• 1 tsp vanilla extract
• Red food coloring (as needed)
• Pinch of salt
For Frosting (Simple Cream Cheese/Buttercream)
• 1 cup (225g) butter, softened
• 250g cream cheese (optional)
• 4 cups (500g) icing sugar
• 1 tsp vanilla extract
Method
• Preheat oven to 180°C (350°F) and grease three separate pans (one for each flavor).
• For each cake (vanilla, chocolate, and red velvet), mix dry ingredients in one bowl and wet ingredients in another, then combine until smooth.
• Pour batter into pans and bake for 25–30 minutes, or until a toothpick comes out clean.
• Let all cakes cool completely.
• Spread frosting thinly between layers and on the sides to hold them together.
• Stack side by side (not on top of each other) so you get 3 different flavors in one slice.
• Slice neatly to show the triple colors.
