Ingredients:

β’ Salt and black pepper
β’ Oil for frying
The mushrooms are soaked, chopped, lightly fried with onion, and mixed into the potato batter. The pancakes are fried slowly until golden.
Thick Bean Soup with Smoked Meat
Ingredients:
β’ Dried beans
β’ Smoked meat or ribs
β’ Potatoes
β’ Onion
β’ Carrot
β’ Garlic
β’ Bay leaf
β’ Black peppercorns
β’ Salt
The beans are soaked overnight and cooked slowly with smoked meat. Vegetables are added gradually, allowing the soup to become thick and warming.

NEW YEAR TABLE β SVITLANA & DMYTROβS FAMILY
Olivier Salad (Classic Family Style)
Ingredients:
* Potatoes β 5β6 medium
* Carrots β 2
* Eggs β 5
* Boiled sausage or cooked chicken β 350β400 g
* Pickles β 3β4
* Canned green peas β 1 can
* Mayonnaise β to taste
* Salt β a pinch
Preparation:
1. Boil potatoes and carrots in their skins, cool, peel.
2. Boil eggs hard, cool.
3. Cut all ingredients into small, even cubes β this is important for texture.
4. Squeeze excess liquid from pickles.
5. Add peas, salt lightly.
6. Mix with mayonnaise β enough to make it juicy, but not heavy.
π Family tip:
Olivier always rests in the fridge for at least 2 hours so the flavors come together.
Herring βUnder a Fur Coatβ (Layered Beet Salad)
Ingredients:
* Herring fillet β 2
* Potatoes β 4β5
* Carrots β 2
* Beets β 2β3
* Eggs β 4
* Onion β 1 small
* Mayonnaise β to taste
* Salt
Preparation:
1. Boil or bake all vegetables, cool completely.
2. Dice herring finely.
3. Chop onion very small (optional: rinse with hot water).
4. Layer in this order:
* Potatoes β mayonnaise
* Herring + onion
* Carrots β mayonnaise
* Eggs
* Beets β generous layer of mayonnaise
5. Let rest overnight in the fridge.
π Carpathian style:
Beets are grated not too fine β the salad should have texture.
Homemade Caesar Salad (Simple, Family-Friendly)
Ingredients:
* Chicken breast β 2
* Iceberg or romaine lettuce
* Cherry tomatoes
* Hard cheese (Parmesan or similar)
* White bread β for croutons
* Garlic β 1 clove
* Oil (olive or sunflower)
Sauce:
* Mayonnaise or yogurt β 3β4 tbsp
* Garlic β Β½ clove
* Lemon juice
* Salt
Preparation:
1. Fry or bake chicken until golden.
2. Cut bread into cubes, toast with garlic.
3. Tear lettuce by hand.
4. Mix everything just before serving to keep it crisp.
5. Add sauce and cheese.
π Family version:
No anchovies β mild and kid-friendly.
Smoked Chicken Thighs
Ingredients:

* Black pepper
* Garlic

1. Marinate at least 4β6 hours, preferably overnight.
2. Smoke using fruit wood (apple wood).

Ingredients:

* Oil
* Salt
* Paprika

* Rosemary or thyme
Preparation:
1. Cut potatoes into large wedges.
2. Mix with oil and spices.
3. Bake or smoke together with meat.
