Stuffed carnival squash. Squashes provide some of the best complex carbohydrate in the plant food kingdom, which makes them very satisfying.

Cut the squash in half, take the seeds out, place them face down in a baking dish lined with parchment paper, add about a half an inch of water to the pan, cover with foil, and bake at 350ยฐ for about an hour.

These are stuffed with a mixture of peas, green onion, zucchini, walnuts, pine nuts, and spices. The nuts provide nourishing fats. The peas add nutrients and plenty of protein. Zucchini adds moisture, protein, and minerals. Sautรฉ this combination in a saucepan until done. Add salt and spices as desired. Scoop into the cooked squash โ€œbowls.โ€ Top with avocado slices or a little cheese; this dish is very low in fat, so there is leeway to add more!

Try different squashes, and be creative with the stuffing. This makes a wonderful dish for cooler weather. ๐Ÿ‚

Chickpeas (also known as garbanzo beans) are one of the most satisfying beans because they contain fat โ€“ unlike most beans, which are naturally fat free. So you get the complex carbohydrates found in all beans plus the satisfying plant fats that they contain. Nuts are best eaten raw. When the oils in nuts are heated, they can be damaged and therefore not as nutritious.

These beautiful organic squashes are at @wheatsville > and their guide is so helpful! Take a screenshot and keep it for reference. Each squash has a different flavor and texture and can be added to any meal for the most amazing complex carbohydrates, providing sustained energy like no other plant foods! The deep orange color in some of these indicates that they are rich in beta carotenes and other antioxidants.

The hardest part is cutting them! ๐Ÿ’ช๐Ÿผ๐Ÿ˜… But itโ€™s so worth it! And one squash goes a long way, providing many servings or more than one meal! ๐Ÿ™Œ๐Ÿผ
