My full name is Daisuke Ikeda, but all of my friends and family call me "Dai".
I created this channel in the Autumn of 2015 with the vision of sharing the various "tips, tricks and techniques" that I've picked up throughout the years of professional cooking from "kappo" style through to "Kaiseki" style of traditional Japanese cuisinešŸ”ŖšŸ£šŸ¤šŸ›šŸœšŸ™
As well sharing the many restaurant recipes that I've learnt in the various kitchens from Tokyo šŸ‡ÆšŸ‡µ to London šŸ‡¬šŸ‡§, I'll also be sharing with you the many home cooked recipes that I've loved cooking and eating myself at home with my family.
Most importantly, this channel is all about having fun 😃, learning and sharing our experiences and knowledge with one another.

Good evening all, apologies for the lack of videos recently.
We’ve returned to work following our restaurant closure due to covid-19 here in London, UK and as you can imagine, we’ve been extremely busy with efforts to get the restaurant up and running again.
Right, excuses out of the way, we’ll be back very soon with some more cooking videos!!!
For the time being, a bit of an update on the prize draw from a few weeks ago.
The winner of that prize draw did not want to provide identification to verify his age, required for me to send the knife to him. Therefore, we mutually agreed that it would be better to have another draw for the same prize and give you all another opportunity to win!!!!

Hello everyone. I hope you’re all safe and keeping well. I can’t believe it’s been over 3 years since our last upload. Where has the time gone?????? Its absolutely flown by hasn’t it.
I’ve missed interacting and cooking for you all so much!!!!!!!! I’m sorry for not responding to all of your comments. But we did read every single one of them, I promise, even the really nasty ones. Ha ha.
So we finally got around to filming another video this afternoon. I’m going to try and finish editing it this weekend, ready to upload for early next week.
We really hope you all enjoy watching it!!! I’ve explained in the video where we’ve been and what we’ve been up to since our last video.
