Have you started your Christmas baking yet? If you are looking for a simple cookie recipe, you should try making these icebox cookies. They are perfectly sweet and buttery, very similar to shortbread and butter cookies.
Ingredients
1 cup unsalted butter, softened to room temperature
¾ cup granulated sugar
¼ cup light brown sugar, packed
2 large eggs
1 teaspoons vanilla extract
3 cups all-purpose flour
1 ½ teaspoons baking powder
½ teaspooon kosher salt
½ cup coloured sugar or sprinkles
Instructions
In a large mixing bowl, beat butter with both sugars. Add in eggs and vanilla extract, beat until fully combined, scraping down the sides of the bowl as needed.
Add in flour, baking powder, and salt. Mix just until combined. Do not overmix.
Form the dough into 2-3 logs (2 inches in diameter), rolling them in coloured sugar. Cover them tightly with
plastic wrap.
Place cookie dough in refrigerator for at least 4 hours (or up to 3 days).
When ready to bake, preheat oven to 375 degrees F. Line a cookie sheet with parchment paper and set aside.
Remove plastic wrap from cookie rolls and slice the dough into ¼-inch slices. Place on prepared baking sheet about 2 inches apart. Bake for about 10 minutes.
Allow to cool 2-3 minutes on the cookie sheet, then remove and cool completely on a wire rack.
