Ambyacha Sansav (aka Sansav or Sasav) is a traditional Goan curry made with ripe mangoes, mustard seeds, and coconut. The name "Sasav" comes from the Konkani word for mustard โ "sasam." This dish is typically prepared in summer when mangoes are in full swing, and is often enjoyed during Goan Saraswat festivities.
Itโs a perfect balance of flavors โ ripe mangoes bring the sweetness, coconut and spices add richness, and mustard gives that punch!
Best enjoyed chilled or at room temperature, usually with rice or chapati.
