For the past 5-6 years, I've been sharing baking tutorials on YouTube (I know, that long!??) I can't believe I'm still here. I could continue my passion thanks to your love and support.
In my business, there is one thing I am so scared to do that I have never done before.
It is... to sell my own product. My own special something!
I thought... nobody would buy. I am not good at business...
talking about all the excuses!π¨
Can you relate?
Even after people asked me:
"Do you have a book?"
"Do you have a course?"
I've said, "I don't have it now, but I hope to later!".
I was not confident. I thought... maybe later. Just later.
But, do I want to continue this career? YES.
Do I want to show my kids that I go get what I want? YES.
So...
Enough is enough!!
Something popped inside of me this year. I decided I would make it happen.
"The something" might end up being a flop, but I gotta take the first step to learn something. Just like my first YouTube video.

Chocolate macarons are slightly harder than regular macarons since the cocoa powder "pops" meringue faster. This can result in very loose macaron batter, flat macaron shells, uneven shapes... etc., more easily.
If you've experienced them before, try this recipe!
Making chocolate macarons using the Italian method is slightly more time-consuming, but you'll be less likely to fail, thanks to the stable and fluffy Italian meringue.
Here are some benefits of making chocolate macarons with Italian meringue:
* The meringue does not quickly get loose after touching cocoa powder - It creates a more stable batter.
* You can add a good amount of cocoa powder (and the meringue can survive better.) - And you can make macaron shells that actually taste like chocolate.
* The surface of the macaron shells is very shiny and smooth.
* It creates thicker macaron shells with nice volume.
* Drying the surface of the macaron batter before baking can be fully omitted or takes less time. (It varies, depending on the oven.)

A new video is just UP!!!π€ A complete guide on making the perfect tart crustβ¨
If you've been following me for some time, you may know I shared a tart crust video years ago.
In this updated tutorial, I included a bunch of new info & tips to hopefully make it a *upgrade*:
- I am sharing how to fit the dough into 4 types of pans and rings - classic pans, rings, perforated rings... and one more new kind that I wanted to test out...π€ Can you guess what it is? I used it for the first time in the tutorial!
- I am showing the process with a large tart pan and perforated ring also, which I don't think I covered enough in the older video (I used tartlet pans and rings mainly).
- Upon a request, I adjusted the recipe so that you can make the tart dough with just one egg (It used to be 1.5 eggs.) which is enough to make about 2 10-inch tarts. I'll also list the older version in the description!
- Many of you asked if you can make the dough with a food processor. I'm showing how in just about a few minutes!
- Introducing how to roll out the dough on parchment paper. I often do this way whenever I don't want to take time cleaning a table or when I want to chill the rolled-out dough in the fridge straight away.
- Over the past 4 - 5 years, the way I make tart crusts changed slightly here and there to get better results.
- I no longer call bread flour "strong flour". That confused many of you...π A huge apology!
