Feed Me Chutney
🍽 Kabuli Palaw, where the rice is cooked inside a gutted pumpkin. 🎃
👩🍳 Try it Yourself:
Ingredients:
2 cups brown basmati rice
1/4 cup vegetable oil or ghee
1 large onion, thinly sliced
1 cup shredded carrots
1/2 cup raisins
1/2 teaspoon ground cinnamon
1/2 teaspoon ground cardamom
1/4 teaspoon ground cloves
1/4 teaspoon ground black pepper
Salt to taste
4 cups water
1 medium-sized pumpkin
Chopped fresh cilantro or parsley for garnish (optional)
Instructions:
Prepare the pumpkin: Cut off the top of the pumpkin and scoop out the seeds and fibers from the inside. You can save the pumpkin seeds for roasting if desired.
Preheat the oven: Preheat your oven to 350°F (180°C).
Rinse and soak the rice: Rinse the brown basmati rice under cold water until the water runs clear. Soak the rice in water for about 30 minutes.
Saute the onions: In a large pot or Dutch oven, heat the vegetable oil or ghee over medium heat. Add the sliced onions and cook until golden brown and caramelized.
Add spices and vegetables: Add the ground cinnamon, ground cardamom, ground cloves, ground black pepper, and salt to the caramelized onions. Stir well. Add shredded carrots and raisins. Cook for another 2-3 minutes until the carrots are slightly softened.
Add drained rice: Drain the soaked rice and add it to the pot. Stir gently to combine the rice with the onion-spice mixture.
Prepare the pumpkin and stuff with rice: Place the gutted pumpkin on a baking sheet. Stuff the pumpkin with the rice mixture.
Boil water and pour into the pumpkin: In a separate pot, bring 4 cups of water to a boil. Pour the boiling water into the pumpkin over the rice mixture.
Bake: Cover the stuffed pumpkin with its top and bake in the preheated oven for about 1 to 1.5 hours or until the rice is cooked, and the pumpkin flesh is tender.
Serve: Carefully remove the stuffed pumpkin from the oven, transfer it to a serving dish, and garnish with chopped fresh cilantro or parsley if desired. Scoop out the rice along with some of the pumpkin flesh when serving.
