I think soba truly represents Japanese culture. If you know how to enjoy the dish on a deeper level, you can feel that culture so much more deeply.
Unlike ramen, which is a complex mix of many flavors (don't get me wrong I love ramen), soba is all about simplicity.
I love soba because it lets you appreciate the natural flavor of each ingredient. It always reminds of how important it is to pay attention to simple things in nature, just the way they are.

I had Tantanmen (spicy sesame noodle soup) today!
