Preheat your oven to 325°F and line a baking sheet with parchment paper.
In a large bowl melt together the coconut oil with the maple syrup. You can do this in the microwave on 30 second bursts. You can also do this on the stovetop in a saucepan on medium heat and then pour it into your mixing bowl. Add in the oats and the vanilla. Stir until all of the oats are coated.
Spread evenly onto prepared pan and bake at 325°F for 20-25 minutes or until golden brown.
Once the oats have had a chance to cool add in the freeze dried strawberries and white chocolate chips. Stir everything together.
Enjoy by itself, with milk, spoon over yogurt or a smoothie bowl. 🩷🍓

The choice you make will determine the life you experience down here. That doesn’t mean life will be perfect because this world is still fallen, but in every circumstance you have His overwhelming peace and joy. You aren’t bound to the things in this world that keep you in chains. When you realize everything culture claims is life and success is completely meaningless in the Kingdom of God you no longer chase after things that hold no value, things that you cannot take with you from this life. True freedom isn’t found in things it’s found in small moments, being present, creating memories and not being distracted by wanting more stuff or more status or more things that take you away from living life. INGREDIENTS: 3/4 cup unsalted butter, softened 1/2 cup brown sugar 1/4 cup sugar (plus more for rolling) 1 egg 1/2 TBS pure vanilla extract 2 cups all purpose flour 1/2 cup cocoa powder (unsweetened) 1 tsp baking soda 1/2 tsp sea salt
DIRECTIONS:
Preheat oven to 325°F and line a large baking sheet with parchment paper then set aside.
In a large bowl or stand mixer cream together the butter and sugars until light and fluffy. About 2-3 minutes.
Add in the egg and the vanilla. Beat for another 1-2 minutes.
In a separate bowl whisk together the flour, cocoa powder, baking soda and salt.
Pour into the large bowl and starting on low speed begin to mix the dry with the wet ingredients. Gradually turn up the speed and beat until all of the dry ingredients are fully incorporated.
Using a 1 1/2 inch cookie scoop to scoop out the cookie dough and roll into a ball. Then in a small bowl with about 1/4 cup sugar roll the cookie dough ball into the sugar to coat.
Place on your cookie sheet about 2 inches apart. Bake for 8-10 minutes or until cookies are just about set. Cookies will continue to bake slightly after being pulled from the oven.
Allow to cool on a baking rack.
Eat them as is or if you want to make them extra special you can dip half of the cookie into some melted white or dark chocolate. Top with some sprinkles if desired. These would make wonderful gifts!

This recipe yields 16 truffles
INGREDIENTS:
13 chocolate sugar cookies 4oz cream cheese, softened Splash of vanilla extract 1 1/2 cups chocolate chips (dark, milk, semi sweet or mint chocolate) I used a combination of 1 cup mint chocolate chips and 1/2 cup semisweet chocolate chips Sprinkles (optional)
DIRECTIONS:
In a food processor pulse the cookies a few times to break up. Then add in the cream cheese and vanilla. Pulse on low speed until everything is well combined.
Using a 1 1/2 inch cookie scoop to scoop out the mixture roll into your hand to form more of a ball. Place on a lined baking sheet and place into the freezer for 10-15 minutes.
Melt your chocolate in 30 second increments in the microwave stirring in between until chocolate is melted.
Drop in your cookie balls one at a time and coat entirely with chocolate. Using a fork to pull out of the chocolate let some of the excess drip off then place back onto your lined baking sheet or you can place them into mini muffin cups. Top with sprinkles if using before the chocolate sets up. Repeat until you’ve dipped all of the cookie balls.
Chill until set. These keep well for up to a week in the refrigerator in a sealed container.
It’s not that looking towards the future is bad, but more often than not it becomes all consuming. Don’t allow it to distract you from all of the wonderful blessings in front of you in this season. I know that some seasons of life we just want to be in the next so badly that it’s hard to really look around where God has you right now. If you really take the time to look though there are good things there too. Maybe it’s the people in your life or how you’ve grown in your relationship with the Lord because in this season He’s called you to lean on Him more than ever.
My point is that we shouldn’t be so caught up in what’s to come that we miss out on the joys and gifts that are in front of us right now. This can also be said in reverse. When we focus so much of our energy dwelling on the past we also miss what we have right now. We can change nothing about the past and very little about the future by giving it all of our attention, but we can definitely miss the now if we aren’t careful. God has good things for you right now even if it’s not everything you’re longing for. Don’t miss it. Soak it in and remember that God isn’t done with you yet.
I don’t know what the future holds for any of us, but I do know the One who has written our stories. He is faithful, He is trustworthy and He is love. So let go of the worry and the anxiety over what is to come and trust that even if it’s not how you pictured it God works all things for the good of those who love Him. His plans for you are good. Rest in that and enjoy what the Lord has for you in this moment. You’ll never get this moment back. Don’t let the enemy steal it from you by taunting you with the past or causing you to stress over the future. Who can gain a single day by worrying? None of us. But we can gain joy when we are fully in the now praising God for all He has for us in this moment.
Ingredients: 3 ripe bananas 1 egg 1/2 cup sugar 1 teaspoon vanilla extract 1/3 cup melted and cooled salted butter 1 1/2 cups all purpose flour 1 teaspoon baking powder 1 teaspoon baking soda 1/2 teaspoon sea salt 1 teaspoon cinnamon 1/4 teaspoon nutmeg 3 Tablespoons sugar in the raw
Optional add ins: 1/2 cup chopped walnuts 1/2 cup finely chopped dark chocolate (you can also use semisweet or milk chocolate if you want)
Melt your butter and set aside to cool.
Preheat your oven to 350°F and line a mini muffin tray with liners, set aside.
In a medium bowl whisk together the flour, baking soda, baking powder, sea salt, cinnamon and nutmeg. Set aside.
In a large bowl or stand mixer mash the bananas. Once mashed add in the egg and the 1/2 cup sugar. After 1-2 minutes add in the vanilla and melted butter.
On low speed add in your dry ingredients until just combined. Scrape down your bowl. Then add in your add ins if using.
Now using a 1.5 inch cookie scoop spoon the batter into the pan. Sprinkle each with a little of the sugar in the raw.
Bake for 13-15 minutes or until they are golden and a toothpick comes out clean or with very few moist crumbs.
This recipe makes 34 mini muffins so if your muffin tray is 24 like mine you’ll have extra batter. Once the first set off muffins comes out of the oven carefully remove them and place them on a wire rack to cool and line 10 more spots with liners. Spoon in the batter like before and top with sugar in the raw. This time though take a small amount of water and fill the empty muffin cups that are next to the filled muffin cups. This will keep them from drying out while baking.

You’ll need 👇🏼

For the streusel topping: 3 TBS all purpose flour 2 TBS melted butter 1 TBS brown sugar 1/2 cup chopped pecans Pinch sea salt 1/2 tsp cinnamon
Preheat oven to 375°F and line a muffin pan with liners, set aside.
Chop the pecans and set aside.
For the muffins melt the butter (either on the stovetop or in the microwave) let cool slightly before adding to a large bowl along with the brown sugar. Whisk until light and fluffy. Then add in the egg and the extracts.
In a small bowl whisk together the flour, baking powder, cinnamon, nutmeg and salt.
Now alternating between the flour mixture and the half and half starting and ending with the dry ingredients mix into the wet ingredients. So 1/3 of the flour then mix then 1/2 of the half and half and repeat. Fold in the cranberries and pecans. The batter will be thick.
Now set aside and in the same bowl you whisked the dry ingredients add all of the ingredients for the streusel and mix together. Now pop into the refrigerator while you fill the muffin cups with batter. I like to use a large cookie scoop or an ice cream scoop for this to make it go quicker. As evenly as you can separate the batter between the 12 muffin cups.
Take the streusel out of the refrigerator and crumble with your fingers. Now sprinkle some on top of each muffin.
Bake for 16-18 minutes or until a toothpick or knife inserted in the center comes out clean. Allow to cool before serving.
If freezing allow to cool completely before placing into a freezer safe ziplock bag. Store for up to 3 months. Or store at room temperature in a sealed container for a few days.
A reminder as we officially enter into the Christmas Season 👇🏼
Let’s be intentional this season. Let’s not get caught up in the lie that in order to have the best Christmas you have to overspend and over load your schedule. Gift giving is fun and I love it as much as the next person, but it shouldn’t cause stress or send you into debt. Less really is more. Be intentional versus just buying a bunch of “stuff”. Again less is more no matter what advertising companies, social media or others want you to think. Just because something is on sale doesn’t mean that you have to buy it. Be intentional with your money as well as your time. Keep Jesus at the center and let everything else fall where it may.
If something’s fall away completely let it! Spend quality time with your family and friends. Make memories instead of debt. Stop buying into the pressure that you have to give more and more each year. That’s not what this season should be about. It’s about remembering that we’ve already received the best gift we ever could in Jesus and His finished work on the cross. Comparing your Christmas to others, going into debt and working yourself up to the point of anxiety and depression is not what this season is about. And it certainly isn’t how we glorify God.

Mini Banana Muffins
This recipe yields 34 mini muffins
Ingredients:

Again less is more no matter what advertising companies, social media or others want you to think. Just because something is on sale doesn’t mean that you have to buy it. Be intentional with your money as well as your time. Keep Jesus at the center and let everything else fall where it may.
If something’s fall away completely let it! Spend quality time with your family and friends. Make memories instead of debt. Stop buying into the pressure that you have to give more and more each year. That’s not what this season should be about. It’s about remembering that we’ve already received the best gift we ever could in Jesus and His finished work on the cross. Comparing your Christmas to others, going into debt and working yourself up to the point of anxiety and depression is not what this season is about. And it certainly isn’t how we glorify God.
