Happy Thanksgiving Week, friends! 🍂🤎

I wanted to pop in and let you know there will be no new video this week. You also may have noticed it's been quiet around here the last couple of weeks — we’ve been soaking up some much-needed family time, and I’ve been working hard behind the scenes to finish up my new cookbook, A Taste of Sourdough! I’m so happy to finally share that pre-orders open this week.

Since we’re heading into Thanksgiving, I thought I’d share a little of what I’m baking for our table this year, along with a few recipes from the cookbook that I think you’ll love. I hope they bring some warmth to your kitchen the way they do to ours.

Smoked Salmon & Herb Sourdough Puff TartIngredients


8 oz cream cheese, softened

2 tbsp sour cream or Greek yogurt

1 tbsp lemon zest

2 tbsp fresh dill, chopped

1 tbsp chives, minced

Salt & pepper

4 oz smoked salmon

½ small red onion, thinly sliced

Capers (optional)

Olive oil for brushing

Dough
250g all-purpose flour (2 cups)
5g fine sea salt (1 tsp)
100g sourdough discard (½ cup)
120g cold water (½ cup)
113g cold unsalted butter, cubed (½ cup / 1 stick)

Instructions

1. Make the Dough
Whisk flour and salt in a mixing bowl.
Add the cold cubed 113g butter and cut it in until you have pea-sized bits throughout (this is where the flakiness comes from).
Add the sourdough discard and cold water.
Mix just until a rough dough forms — do not overwork.
Form into a rectangle, wrap tightly, and refrigerate 1 hour.

2. Rolling & Folding (Quick Lamination)
Lightly flour your surface.
Roll dough into a long rectangle (about 8×18 inches).
Fold it like a letter (a tri-fold).
Rotate the dough 90 degrees and roll again.
Fold like a letter again.
Chill 20–30 minutes.
Repeat 1 more fold (3 folds total for beautiful layers).
This gives lift and flakiness without needing a separate butter block.

3. Final Chill & Divide
After the last fold, chill dough for at least 1 hour (or overnight for best flavor).
Cut into 2 equal sheets.
Roll each sheet to ⅛–¼ inch thickness depending on your recipe.

Instructions

1. Prep Pastry

Preheat 400°F

Roll pastry into one large rectangle

Score border

Brush edges with olive oil

2. Bake Base

Bake 15 minutes, or until puffed and golden.

3. Make Creamy Herb Spread

Mix:

cream cheese + sour cream + lemon zest + dill + chives + salt + pepper.

4. Assemble

Spread layer of herb cheese onto cooled tart

Add smoked salmon pieces

Add red onion

Add capers if desired

5. Serve

Finish with extra dill + lemon zest.

Sourdough Cranberry Lemon Loaf
A bright and tangy winter loaf made with sourdough starter, fresh lemon zest, and juicy cranberries. Moist, fragrant, and finished with a simple lemon glaze.

Ingredients
Dry Ingredients
1 ¾ cups (210g) all-purpose flour
1 tsp baking powder
½ tsp baking soda
½ tsp fine sea salt
Wet Ingredients
½ cup (113g) unsalted butter, melted
1 cup (200g) granulated sugar
2 large eggs, room temperature
½ cup (120g) sourdough starter (active or discard)
½ cup (120g) milk or buttermilk
1 Tbsp vanilla extract
Lemon
Zest of 2 lemons
⅓ cup (80g) fresh lemon juice
Cranberries
1 ½ cups fresh or frozen cranberries
2 Tbsp all-purpose flour (for tossing)

Instructions
1. Prep
Preheat the oven to 350°F (175°C). Line a standard loaf pan with parchment paper.
2. Mix the Wet Ingredients
In a large bowl, whisk together the melted butter, sugar, eggs, sourdough starter, milk, vanilla, lemon zest, and lemon juice until smooth.
3. Combine the Dry Ingredients
In a separate bowl, whisk the flour, baking powder, baking soda, and salt.
Add the dry ingredients to the wet ingredients and fold gently until just combined.
4. Fold in the Cranberries
Toss the cranberries with 2 tablespoons of flour. Fold them into the batter, being careful not to overmix.
5. Bake
Pour the batter into the prepared loaf pan.
Bake for 55–65 minutes, or until a toothpick inserted in the center comes out clean.
Cool completely before glazing.
Lemon Glaze
1 cup (120g) powdered sugar
2–3 tablespoons fresh lemon juice

Optional: extra lemon zest for topping
Whisk together the powdered sugar and lemon juice until smooth and pourable.
Drizzle over the cooled loaf.
