Cook Local Anywhere: Why Local Ingredients Matter (Plus Our Basque Cheesecake Recipe)
At The Road Less Traveled Cuisine (RLT Cuisine), we believe something simple can change the way you cook—and the way you experience food:
Local ingredients aren’t a detail. They’re the origin of the story.
No matter what we cook, the real “main character” is always the ingredient that comes from nearby—grown, made, or sourced close to where we are. Because local food tastes like a place. It carries identity, season, and the work of the people behind it.
Cooking local also creates real impact. Every time you choose a local producer—your neighborhood cheesemaker, your farmer’s market, your favorite small bakery—you’re strengthening a whole ecosystem. It’s not just about “supporting local” as a slogan. It’s about keeping craft alive and building stronger communities through what we eat.
And here’s the most important part: you don’t have to be in Costa Rica to cook like this.
Our mission is to inspire you to cook local wherever you live—and when you visit Guanacaste, Costa Rica, come taste what we do in person through RLT Cuisine / The Road Less Traveled Cuisine.
To make it practical, here’s one of our favorites: a Basque-style cheesecake with a touch of miso. Simple ingredients, big reward—and yes, you can make it using local cream cheese or a local fresh cheese from your city. That’s the point: your version becomes your place.
Basque Cheesecake with Miso.
Ingredients (grams):
765 g cream cheese
13 g miso
255 g sugar
23 g cornstarch
306 g eggs (about 5–6 large eggs, weighed)
306 g heavy cream
Bake: 220°C / 430°F for 25–30 minutes
Method (simple):
Preheat your oven to 220°C / 430°F. Mix cream cheese, sugar, and miso until smooth. Add eggs gradually, then mix in the cream. Add cornstarch and combine until fully smooth. Pour into a parchment-lined springform pan and bake 25–30 minutes until the top is deeply caramelized but the center still has a gentle wobble. Cool, then chill for the best slice.

Beyond Gallo Pinto: Rediscovering Costa Rican Ingredients in Our Guanacaste Food Lab
Beyond gallo pinto and the classic casado, Costa Rican cuisine hides a whole world of flavors that rarely reach the plate. From our beachside Food Lab in Playa Potrero, Guanacaste, we’re exploring forgotten ingredients and non-conventional edible plants from the dry tropical forest.
One of them is uva de monte – a wild fruit that Colombia celebrates as corozo, but in Costa Rica almost nobody cooks with. We collect it near the Tempisque River, bring it to the lab and turn it into sauces, ferments, sorbets and ideas for future menus.
For us, being a private chef project in Guanacaste is not just about cooking for villas and beach houses. It’s about listening to the land, rescuing underused ingredients and helping put Costa Rica on the gastronomic map, one local flavor at a time.
