Black Pomfret Fish Curry with Raw Mango
Ingredients:
8 Kashmiri Chillies
1½ tsp Cumin Seeds
½ tsp Turmeric Powder
½ tsp Peppercorns
2–3 Garlic Cloves (equals 1 tsp garlic paste)
2 medium Onions, finely sliced
A few Curry Leaves
2 medium Raw Mango, sliced ( bottle mango/totapuri mango)
Fish head and tail pieces
Salt to taste
Water as required
Method:
1. Grind Kashmiri chillies, cumin seeds, turmeric powder, peppercorns, and garlic into a smooth paste using just enough water.
2. Heat oil in a pan, sauté sliced onions and curry leaves until the onions turn light brown.
3. Stir in the ground paste and cook for a minute until the raw aroma fades.
4. Add water to reach desired curry consistency. Bring to a boil, season with salt, and cook for 2 minutes.
5. Gently add the raw mango slices and fish head and tail pieces. Simmer until the fish is cooked and the flavours blend beautifully.
Fried Fish
Ingredients:
12 Fish Slices (Pomfret or any firm fish)
1 Green Chilli
1 tbsp Coriander Powder
½ tsp Cumin Powder
¼ tsp Pepper Powder
¼ tsp Garam Masala Powder
1 tbsp Ginger Garlic Paste
1 Onion, finely chopped
½ tsp Turmeric Powder
1 tsp Vinegar
Salt to taste
Semolina and Rice Flour or Wheat Flour (for coating)
Oil for shallow frying
Method:
1. The Masala Paste:
Sauté the chopped onion until translucent. Add the green chilli and stir for a minute. Once cooled, grind it with the remaining spices, vinegar, ginger garlic paste, and salt using just enough water to form a thick paste.
1. Coat the fish slices evenly with this masala paste. Then coat lightly with a mix of semolina and rice or wheat flour.
2. Heat oil in a pan and shallow fry the fish slices on medium heat until crisp and golden brown on both sides.
Since it was a big-sized Black Pomfret, I used the head and tail pieces for the curry, and 12 slices for frying, reserving the remaining fish slices for later use.

🌽 Makki Pancakes (Cornmeal Pancakes)

🌽 Savoury Cornmeal Pancakes
These savoury cornmeal pancakes are a wholesome twist to the regular breakfast. Made with makki atta, a touch of wheat flour, fresh coriander, and simple spices, they turn out light yet filling. Perfectly spiced and golden crisp, they make a comforting meal for breakfast.
Ingredients (makes 6 medium pancakes)
1 cup makki atta (cornmeal flour)
( 200 ml cup)
⅓ cup wheat flour
A generous amount of finely chopped fresh coriander leaves
4 green chillies, finely chopped
1 tsp coriander powder
½ tsp cumin powder
¼ tsp pepper powder
Salt to taste
2 medium size onions finely chopped
Water as required (to make a pourable batter) , I have used almost 500 ml of water. Gradually add water to prepare the batter of your desired consistency
Oil or ghee, for cooking
Method
1. In a mixing bowl, combine makki atta and wheat flour. Mix in the finely chopped coriander leaves, finely chopped onions, green chillies, and all the spice powders with salt.
2. Gradually add water to make a smooth, pourable batter. The consistency should be slightly thicker than dosa batter.
3. Heat a non-stick tawa or skillet. Grease lightly with oil/ghee.
4. Pour a ladleful of batter and spread gently into a round pancake.
5. Drizzle a few drops of oil / ghee around the edges and cook on medium flame until golden spots appear. Flip and cook the other side.
6. Repeat with the remaining batter.
Serving Suggestion
Serve hot with green chutney, curd, or ketchup .They taste great for breakfast or a light evening snack.

Ingredients
1 cup makki atta (cornmeal flour)
⅓ cup wheat flour
1 egg, well beaten
1 tbsp or 2 tbsp sugar (adjust to taste)
½ tsp spice mix (cinnamon + nutmeg)
Or spice mix powder

Method
1. In a bowl, whisk together beaten egg ,sugar, spice mix and salt.

3. Heat a non-stick pan, grease lightly with butter/ghee.
4. Pour small ladles of batter to make pancakes. Cook until bubbles appear, flip, and cook the other side until golden.
5. Repeat for the rest of the batter.
Serving Suggestions
Drizzle with honey or maple syrup.
Add chopped fruits like banana, apple, or berries.
Peanut butter spread or chocolate spread will make kids love it even more.

Fish Curry, Fried Fish & Rice
Our lunch for today – a flavourful green masala pomfret curry served with fried pomfret.
This green masala pairs equally well with Bombay ducks, rawas, or prawns.
🌿 Green Masala Paste
Ingredients:
• 1 tbsp coriander seeds
• 1 ½ tsp cumin seeds
• ½ tsp peppercorns
• ¼ tsp turmeric powder
• ¼ tsp methi (fenugreek) seeds
• 2 onions, roughly chopped (100 grams )
• Small ball of tamarind
• 80 grams of fresh coriander leaves
• 3 green chillies
• 1 tbsp ginger–garlic paste
Method:
1. Dry grind the whole spices.
2. Add onions, green chillies, tamarind, coriander leaves, and ginger–garlic paste.
3. Blend with just enough water to form a smooth paste.
🐟 Pomfret Curry
Ingredients:
• 2 pomfrets – cut into slices (keep head and tail pieces for the curry)
• 2 medium onions, finely sliced
• 2 medium tomatoes, finely chopped
• Salt to taste
Method:
1. Heat oil and sauté the sliced onions until lightly golden.
2. Add chopped tomatoes and cook until soft and mushy.
3. Stir in the prepared green masala paste and sauté for a minute on medium flame.
4. Add water to adjust to curry consistency. Season with salt.
5. After 2 minutes, add the pomfret pieces and cook until the fish is done.
🐟 Fried Pomfret
Ingredients:
• Pomfret slices
For the marinade:
• 1 ½ tsp chilli powder
• 1 ½ tsp coriander powder
• ¼ tsp pepper powder
• ¼ tsp cumin powder
• ¼ tsp garam masala powder
• ¼ tsp turmeric powder
• Salt to taste
• 1 tbsp ginger–garlic paste
• Splash of lime juice or white vinegar
Coating:
• Mix of semolina and rice flour
Method:
1. Marinate the fish slices with the prepared spice mix.
2. Coat each slice in the semolina–rice flour mixture.
3. Shallow fry until golden and crisp.
✨ Serve the green masala pomfret curry, fried fish, and rice together for a wholesome, delicious meal.

Besan Chillas (Gram Flour Savoury Pancakes) / Vegan Tomato Omelette
These chillas are light, wholesome, and super easy to prepare. At home, they’re always a hit! You can easily switch things up:
Grated carrot can be replaced with grated zucchini or broccoli.
Coriander leaves can be swapped with fresh basil, fresh fenugreek leaves, mint leaves, or even a mix of mint and coriander.
Ingredients (200 ml measuring cup used)
3 cups besan / gram flour
2 cups water
Salt to taste
1 carrot, grated
3 green chillies, finely chopped
1 tomato, finely chopped
A generous handful of coriander leaves, finely chopped
1 tsp coriander powder
¼ tsp cumin powder
¼ tsp pepper powder
¼ tsp turmeric powder
A pinch of chilli powder (or to taste)
Method
1. In a mixing bowl, combine the besan with all the spice powders.
2. Add grated carrot, chopped coriander leaves, green chillies, and tomato to the flour mixture.
3. Gradually pour in water to form a smooth batter. Add salt to taste.
4. To prepare the chillas:
Heat a non-stick pan and pour a ladleful of batter onto it, spreading gently.
Brush the edges with a little clarified butter (ghee).
Flip and cook the other side, brushing the edges again with ghee.
5. Serve hot with chutney, ketchup, or enjoy them as they are.
