1️⃣ The Magic of Baking Soda & Acid: The key to soft muffins is the reaction between baking soda and an acid like buttermilk, sour cream or yogurt. This chemical process creates bubbles, helping your muffins rise beautifully. 🧪🌋 However, it's really important to add the right amount of baking soda—only the amount that can be neutralized by the acid in the sour cream you are adding. This recipe balances those ingredients perfectly—no yucky baking soda taste should remain.
2️⃣ Gentle Mixing is Key: When combining wet and dry ingredients, resist the urge to overmix! Overmixing can make muffins dense and tough. Stir just until combined, and you’ll be rewarded with light, fluffy muffins.
3️⃣ The Muffin Top Trick: Want that perfect domed muffin top? Start by preheating your oven to a high temperature (about 220°C/425°F), then lower it once the muffins go in. This initial burst of heat helps create that gorgeous rise we all love!
