Cherry Tomatoes 🍅 | Today’s Harvest

A few months ago, I planted cherry tomatoes behind my restaurant. Honestly, I didn’t take care of them as much as I should have—I even missed watering them sometimes.

But today, they still gave me fruit.

It reminded me that growth doesn’t always need perfect conditions. Sometimes, consistency (even imperfect) is enough.

This is why I started planting in the first place—for a farm-to-table concept in Estéra. Fresh ingredients, better quality dishes, and a way to reduce food costs.

And today, it finally feels real.

Spanish Style Salmon Roulade

Toppings/Garnishes: Lemon, Crispy Fried Parsley Leaves, Black Sesame Seeds

Sauce: Stock (Celery Stalk, Onion, Carrot, Slices of Salmon, Shrimp Head), Heavy Cream, Salt and Pepper, Cheese, Parsley Oil

Fillings: Blenderized Shrimp, Salmon, Heavy Cream, Saffron, Cayenne, Spanish Paprika, Egg, Salt and Pepper, Olive Oil

Roll: Brushed with Olive Oil, Salt and Pepper, Spanish Paprika

Method of Cooking: Combinations of Moist and Dry Heat Cooking
