Ingredients
2 @cutdacarb flatbreads
6 oz. Beef Chorizo
5-6 slices of crisp chopped Bacon
2 Eggs
4 tbs Pico de Gallo
Cilantro, chopped
@elmexicano Cotija graded cheese
1/2 cup Avocado Oil
2 tbs butter
Directions for @cutdacarb Fat Boy shells
*In a medium frying pan heat Avocado Oil on low.
*Find a bowl or plate with a 7” diameter and place on top of both flatbreads. Using a sharp tip knife go around to cut out shells. Use leftovers for chips or smaller tacos or tostadas.
*Once oil is warm place one cutout in the oil and flip with tongs after a couple seconds. After a couple more seconds pick up shell and hold it to make an L with the short part(about 2”)being kept in the oil.
*Leave it there for 30-60 seconds and when you pull up from oil it should be hardened into place to make an L
*Now using tongs grab it by the short side that’s hardened and dip opposite side(2”) into oil to make a U shape for 30-60 seconds.
*Finally set shell U bottom down for 30-60 seconds to crisp last section and then let dry on paper towel
Taco Filling Directions
*In a medium pan break up and cook chorizo about 5 minutes on medium. *Strain the oil from Chorizo and then in a medium bowl mix in Bacon, Pico de Gallow and most of Cilantro
Crispy Eggs
*I like my Cast Iron best and set it on medium with a tbs of butter per egg. *Once butter starts to brown a little I crack the eggs into pan.
*Let it cook until all the white is cooked through and edges have become crispy.
*Now you’re ready to assemble 2 Fat Boy Tacos!

�Thin grilled eggplant pieces with italian inspired topping. I have shared the recipe for you right here if anyone wants to make it:
*Half eggplant, 3 slices
*Handful of small tomatoes
*2 tablespoon of hummus
*2 tablespoon of green pesto
*2 teaspoon of parsley
*olie, salt and pepper
�Wash the tomatoes, chop them in small pieces and cook in oil, salt and pepper on a pan. Slice the eggplant and add on pan too in a few minutes on each side. Serve with hummus, pesto, fried tomatoes and fresh parsley. 🍴

What is the kitchen serving up there today?
Well, roasted chicken breast with tomato and mozzarella, and salad with cucumber and cream ♡

I used the chicken marinade
2 tablespoons of Greek yogurt
2 cloves of garlic
Lemon juice
Salt and pepper
Sweet pepper
We mix everything together and peel the meat, leave it for a few hours.
Later:
1 single chicken breast
1 ball of mozzarella
1 small tomato
Cut the breast, but not completely, and insert a slice of tomato and a slice of mozzarella into each incision.
Then to the furnace at 180 °, I just don't know how much it has baked because I did something in the meantime and didn't pay attention to it 🙈

No magic pill used here... just hard work, motivation, and consistency! 💪🏼
Trust me, it’s not always easy to stay consistent. Sometimes I have my good and bad days. Recently I have been focusing on a high protein diet but sometimes there are days where I’ll have a couple of fries that aren’t made of jicama or a burger that isn’t lettuce wrapped!
A weight loss journey never stops. I’ve been on my journey for over 15+ years.
There are plenty of ups and downs but it’s 💯 worth it!
If you fall off track or “cheat”, don’t get discouraged! It happens to everyone! You guys are not alone! I know the feeling more than you know.
Goals won’t be met overnight. My transformation came from discipline, focusing on nourishing my body, falling off and getting back on track, working out, being lazy, eating burgers/fries and clean keto.
Nobody has the perfect weight loss journey. Everyone’s journey is different! If I can do it, you can too. Focus on being healthy and weight loss will come👏
