- 1 tsp Fenugreek Seeds
- 1 tsp Black Peppercorns
- 1 tbsp Cumin Seeds
- 2 sprigs Curry Leaves (preferably sun-dried)
- ½ tsp Turmeric Powder
- ¼ tsp Asafoetida (Hing)
- ½ tsp Oil (for roasting)
📝 Preparation Steps:
Heat a heavy kadai and add ½ tsp oil.
1. Roast coriander seeds until they turn golden brown and aromatic. Remove and keep aside.
2. Fry the dry red chilies until crisp.
3. Next, dry roast toor dal, chana dal, and urad dal separately until golden.
4. Add fenugreek seeds, pepper, cumin seeds, and curry leaves – roast until they release fragrance.
5. Switch off the flame, then add turmeric powder and asafoetida. Mix well.
6. Allow all roasted ingredients to cool completely.
7. Grind them together in a blender to a fine powder.
8. Transfer to an airtight glass jar. This masala stays fresh for up to 2 months.
