Coconut Milk Cake
Ingredients
:1 cup desiccated coconut1 cup sugar1 1/2 cups plain flour1/2 cup butter (softened)
2 eggs1 cup milk (or 1 cup water mixed with
3 tablespoons milk powder)
1 teaspoonbaking powder
1 teaspoon vanilla extract
(optional)
Instructions:Preheat the Oven:Preheat your oven to 350°F (175°C). Grease and flour an 8-inch round cake pan.Prepare the Batter:In a large mixing bowl, cream the butter and sugar together until light and fluffy.Add the eggs one at a time, beating well after each addition.Mix in the vanilla extract if using.Combine Dry Ingredients:In a separate bowl, whisk together the flour, baking powder, and desiccated coconut.Mix Wet and Dry Ingredients:Gradually add the dry ingredients to the butter mixture, alternating with the milk (or milk powder mixture), starting and ending with the dry ingredients. Mix until just combined.Bake the Cake:Pour the batter into the prepared cake pan and spread it evenly.Bake in the preheated oven for 25-30 minutes or until a toothpick inserted into the center of the cake comes out clean.Cool and Serve:Allow the cake to cool in the pan for about 10 minutes, then transfer it to a wire rack to cool completely.Once cooled, you can dust it with powdered sugar or top it with some extra desiccated coconut if desired.Enjoy your homemade Coconut Milk Cake!
