Adana kebab is a popular Turkish dish made from minced meat and spices. Here's a recipe for making Adana kebab at home:


Ingredients:

1 lb ground lamb or beef
1 large onion, finely chopped
2-3 cloves of garlic, minced
1 teaspoon paprika
1 teaspoon cumin
1 teaspoon salt
1/2 teaspoon black pepper
1/2 teaspoon red pepper flakes
1/4 cup chopped fresh parsley
Skewers (metal or wooden)


Instructions:

-Soak the wooden skewers in water for at least 30 minutes before using them.

-In a large mixing bowl, combine the ground meat, onion, garlic, paprika, cumin, salt, black pepper, red pepper flakes, and parsley. Mix well until all the ingredients are evenly distributed.

-Divide the meat mixture into 6-8 portions and shape each portion into a sausage shape, about 6-8 inches long and 1 inch thick.

-Take a skewer and wrap the meat mixture around it, pressing it firmly to the skewer. Repeat this step with the remaining meat mixture.

-Preheat your grill or grill pan to high heat. Brush the Adana kebabs with a little bit of oil and place them on the grill.

-Grill the kebabs for 6-8 minutes on each side, or until they are cooked through and slightly charred on the outside.

-Serve the Adana kebabs hot with pita bread, chopped tomatoes, onions, and fresh parsley.

Here is a recipe to make vegetable pakoras at home:



Ingredients:

1 cup gram flour (besan)
1/4 cup rice flour
1 tsp cumin seeds
1 tsp coriander seeds
1/2 tsp red chili powder
1/2 tsp turmeric powder
1/2 tsp garam masala powder
Salt to taste
1/4 cup water (or as needed)
2 cups mixed vegetables (such as onions, potatoes, bell peppers, spinach, cauliflower, etc.)
Oil for frying


Instructions:

-In a mixing bowl, combine gram flour, rice flour, cumin seeds, coriander seeds, red chili powder, turmeric powder, garam masala powder, and salt.
-Gradually add water to the mixture, stirring constantly to form a smooth batter of medium consistency. The batter should not be too thick or too runny.
-Cut the vegetables into thin slices or small pieces.
-Add the vegetables to the batter and mix well until all the pieces are coated.
-Heat oil in a deep frying pan on medium-high heat.
-Using a spoon or your hands, scoop the batter and vegetables into small portions and carefully drop them into the hot oil. Fry until they turn golden brown and crispy.
-Remove the pakoras with a slotted spoon and place them on a paper towel-lined plate to remove excess oil.
-Serve hot with chutney or ketchup.
-Enjoy your delicious homemade vegetable pakoras!

Lets Make Chicken Biryani:



Ingredients:

1 kg chicken, cut into pieces
2 cups basmati rice
4 cups water
1 large onion, sliced
4-5 green chilies, slit
1/2 cup yogurt
2 tablespoons ginger garlic paste
1 tablespoon red chili powder
1 tablespoon coriander powder
1/2 teaspoon turmeric powder
1 teaspoon cumin seeds
1 teaspoon garam masala powder
1/2 cup chopped coriander leaves
1/2 cup mint leaves
2 tablespoons ghee or oil
Salt to taste


Instructions:

-Wash the rice thoroughly and soak it in water for about 30 minutes.

-In a large pot or pan, heat ghee or oil and add cumin seeds. When they start to splutter, add the sliced onions and sauté till they turn golden brown.

-Add ginger garlic paste, green chilies, and all the spices (red chili powder, coriander powder, turmeric powder, and garam masala powder) and cook for a minute.

-Add the chicken pieces and cook on medium heat till they are browned on all sides.

-Add yogurt, coriander leaves, mint leaves, and salt to taste. Mix well and cook for a few minutes.

-Drain the soaked rice and add it to the pot. Add 4 cups of water and mix well.

-Bring the mixture to a boil, then reduce the heat to low and cover the pot with a lid. Let it cook for 20-25 minutes, or until the rice is cooked and the water is absorbed.

-Turn off the heat and let the biryani rest for 10-15 minutes before serving.

-Serve hot with raita, pickle, and papad.
