INGREDIENTS FOR ROSEMARY SEARED SALMON WITH CHERRY TOMATOES
âSalmon fillets (with skin) - 2 pieces
âCherry tomatoes - 1 cup
âFresh rosemary sprigs - 3-4
âOlive oil - 3 tablespoons
âGarlic cloves - 2, minced
âSalt - to taste
âBlack pepper - to taste
âLemon juice - 1 tablespoon
âButter (optional) - 1 tablespoon
âMixed peppercorns - 1 teaspoon (optional, for garnish)
STEP-BY-STEP PROCEDURE
STEP 1: PREPARE THE INGREDIENTS
âRinse the salmon fillets under cold water and pat them dry with a paper towel. Make sure the skin is dry to achieve a crispy finish.
âSeason the salmon with salt and black pepper on both sides.
âWash the cherry tomatoes and set them aside.
âMince the garlic and set it aside.
âPrepare fresh rosemary sprigs by rinsing them gently.
STEP 2: HEAT THE PAN
âPlace a non-stick or cast-iron skillet on medium heat and add 2 tablespoons of olive oil.
âAllow the oil to heat up until itâs shimmering (not smoking).
STEP 3: SEAR THE SALMON
âPlace the salmon fillets skin-side down in the pan. Press them gently with a spatula to ensure even contact with the pan.
âSear for 4-5 minutes without flipping to allow the skin to crisp up.
âFlip the fillets carefully and cook the other side for an additional 3-4 minutes. If desired, add a tablespoon of butter at this stage for extra flavor.
STEP 4: COOK THE CHERRY TOMATOES
âOnce the salmon is cooked, remove it from the pan and set it aside on a plate.
âAdd the remaining 1 tablespoon of olive oil to the same pan and toss in the minced garlic. SautĂŠ for about 30 seconds until fragrant.
âAdd the cherry tomatoes and rosemary sprigs. Cook for 3-4 minutes, stirring occasionally, until the tomatoes soften and blister.

âReturn the salmon to the pan and drizzle lemon juice over the fillets.
