An old favourite, Moist Spelt Ginger Cake; here I have decorated the ginger cake with my easy not too not-too-sweet buttercream frosting, chopped walnuts and fresh figs. I haven't made this since living in Sweden, and had to adapt my UK recipe to suit what I had on hand and in my pantry. It was a success and an easy cake to whip up for a special treat. My husband was very happy.

St. Lucia's Day in Sweden
St. Lucia's Day, or Luciadagen, is celebrated on December 13th and is one of Sweden's most cherished traditions. This festive day honours Saint Lucia, a Christian martyr known for bringing light during the darkest time of the year. While rooted in Christian history, the celebration has evolved into a cultural tradition focusing on light, music, and togetherness.
Celebrated with these special Swedish saffron buns Lussekatter: Sweet, golden buns flavoured with saffron and studded with raisins are the hallmark treat of Lucia Day.
