ہم عام طور پر روزمرہ کے معمولات میں سفید گندم استعمال کرتے ہیں، لیکن سیاہ گندم سفید گندم کے مقابلے میں زیادہ صحت بخش ہے اور اس میں بہت سے اہم غذائی اجزا پاۓ جاتے ہیں اور اسے کھانے سے جسم کی قوت مدافعت میں بھی اضافہ ہوتا ہے۔ کالی گندم میں اینٹی آکسیڈنٹس، بی وٹامنز، فولک ایسڈ، سیلینیم، میگنیشیم، مینگانیز، زنک، کیلشیم، آئرن، کاپر، پوٹاشیم، فائبر اور امائینو ایسڈز پائے جاتے ہیں، جو اس گندم کو غذائیت سے بھرپور بناتے ہیں۔

کالی گندم کے اہم فوائد:
موٹاپا کم کرتی ہے
ذیابیطس کنٹرول کرتی ہے۔
بلڈ پریشر کنٹرول کرتی ہے۔
کولیسٹرول لیول نہیں بڑھتا۔
قبض کو دور کرتی ہے۔

کالی گندم کو کئی سالوں کی تحقیق کے بعد نیشنل ایگرو فوڈ بائیو ٹیکنالوجی انسٹی ٹیوٹ یونیورسٹی، موہالی پنجاب میں 2017 میں تیار کیا گیا تھا
جو چیز کالی گندم کو رنگ میں مختلف بناتی ہے وہ ہے اینتھوسائیانین "Anthocyanin" نامی روغن جو پھلوں اور سبزیوں کے رنگوں کا بھی تعین کرتا ہے۔
عام گندم میں 5 پی پی ایم تک اینتھوسائیانین ہوتا ہے۔ جبکہ کالی گندم کے دانے میں تقریباً 100 سے 200 پی پی ایم تک اینتھوسائیانین ہوتا ہے
اس میں زنک اور آئرن کی سطح بھی عام گندم کی نسبت زیادہ ہوتی ہے۔ کالی گندم میں عام گندم کے مقابلے میں تقریباً 60 فیصد زیادہ آئرن ہوتا ہے۔یہ عنصر کالی گندم کو سائنسی طور پر ایک صحت مند آپشن بناتا ہے۔ یہ Anthocyanin قدرتی طور پر پائے جانے والے اینٹی آکسیڈنٹس ہیں جو دانہ بھرائی کے وقت کھیت میں تیار ہوتے ہیں، اس وجہ سے کالی گندم کو بہت زیادہ غذائیت سے مالا مال قرار دیا گیا ہے۔
اس کے علاوہ کالی گندم ذہنی تناؤ، موٹاپے، کینسر، ذیابیطس اور دل کی بیماریوں سے بچاؤ میں مددگار ہے۔
Anthocyanin اینتھوسائیانین
