I asked the amazing chefs at @talonlodge to help my chef’s series be the best the lodge had ever seen. The crazy great chefs – Chef Jack, Chef Andrew, Chef Buerto, and Chef Katie — brought it and helped me succeed. I couldn’t have done it without them! They were THE BEST to collaborate with, bringing the menu to life! I even got a “spot on” from a New Orleans’ table of guys, including Richard Thomas, President of @bluerunnerseafood -Blue Runner Foods - (a New Orleans manufacturer of all things New Orleans). Yes, I was quite anxious cooking my Creole inspired menu for him and the other foodies, as well as a restaurateur guests!

Who out there loves fish? One of my favorite clean ways to prepare fish is to poach it in crazy water. The Italian name for this dish is Pesce all’Acqua Pazza — literally, “fish in crazy water.” The “crazy” part is the heat from the red pepper flakes. My version also includes white wine, garlic cloves, and grape tomatoes (or cherry tomatoes if you like). I promise you will love this!
