My wife takes a carb blocker because her blood sugar rubberbands and gets dangerously low after a normal blood sugar change post-meal. We already can meat and stocks, we grow a lot of low carb veg 9-10 months a year (central california). I still found this discussion incredibly well-organized and full of valuable information.
