I've never made a proper dosa at home. Growing up in Kolkata, it was something we went out to eat so when I moved to the US, I found it intimidating to cook it at home.

But I decided to challenge myself and learn while I was cooking with Chef Vijay at Semma in NYC.

I learned so much and it reminded me how much cooking is about learning from your mistakes.
