I share recipes from my grandmother's kitchen, regional dishes and my Indian twists on classic American dishes. Originally from Kolkata, India, I'm now a private chef in Las Vegas. I believe cooking is more than just sustenance and I hope you get to experience a bit of that through this channel.

I've never made a proper dosa at home. Growing up in Kolkata, it was something we went out to eat so when I moved to the US, I found it intimidating to cook it at home.

But I decided to challenge myself and learn while I was cooking with Chef Vijay at Semma in NYC.

I learned so much and it reminded me how much cooking is about learning from your mistakes.

You don’t need cream. You don’t need lemons. You don’t need perfection.

Just milk will work too. Use whole milk.

Out of lemons? Use vinegar, lime juice, even citric acid. Add it slowly, and stop as soon as the milk curdles.

Don’t love that slight tang? Rinse the curds in cold water before pressing.

Recipes can be helpful in the beginning, if you've never cooked before, but they might be holding you back. Here's why.

1. Recipes don't allow you to develop instincts in the kitchen. You don't get the opportunity to make mistakes, learn from them and become a better cook, as a result.

2. Recipes hold back your creativity in the kitchen. You're ultimately cooking to someone else's taste, not yours.

3. Recipes make the process of cooking mechanical. Measuring every ingredient with 100% precision is not how you learn to cook. It just makes cooking following a set of instructions. Enjoying cooking means being immersed in the process and using all of your senses to let the dish guide you, not the recipe.

I hope this helps you make cooking a bit more enjoyable.

This technique is a mistake in other cuisines.

Oil separation is a key technique in Indian cuisine. This ensures that the excess moisture has been cooked out and the flavors have intensified.

However, this would be considered a split sauce in certain cuisines like French where smooth emulsions are the norm.

Do you feel like you need to salt your food just right in one go?

I used to feel like that until I saw professional kitchens with tasting spoons everywhere and chefs tasting their food multiple times.

I thought the art of seasoning came down to getting it right after years of practice but in fact, it's tasting and adjusting as you go.
